Chef's Restaurant While we're still fans of Gaël Orieux's fish philosophy, with its immense respect for the product, the other dishes are less subtle. In the first part of the meal, tetragon soup with herbs, frogs and smoked eels, followed by monkfish with carrots and a kalamansi reduction, delighted us; quail, salsify, onions and smoked vinegar and baba with limoncello flavors, accompanied by a lychee freshness, were less convincing, in a €96 menu that nevertheless remains good value. The room is sober and warm, with walls carved in the shape of waves to recall the chef's passion. The staff are friendly and attentive, and the wine list matches the cuisine, with an expensive choice by the glass.
