Chef's Restaurant A stone's throw from a prestigious neighbor (Alain Passard's Arpège), Gaël Orieux can pride himself on having been faithful to his values for ages, having been a pioneer in the promotion of virtuous fishing and, in this respect, contenting himself with the best while respecting the living: oysters in seawater jelly, horseradish mousse and comice, turbot with peas and shimeji crab, crispy sweetbreads with peanuts, chanterelles, dried apricots and Jura wine, chocolate soufflé with Paris honey ice cream. Expect to pay around €120 à la carte, or with the Signature menu, for a meal that's often brilliant and always masterful, in a hushed atmosphere of connoisseurs.
