Chef's Restaurant It's a seaside Pierre Gagnaire we can't get enough of, with a chic, woodsy interior style that exudes extra-mural flair. The dishes reflect the professionalism that goes with the name, with fine produce and technique: lacquered red tuna slices, daikon turnip, oyster ice and seaweed jelly, poached turbot in Froment du Léon butter, carrot mousseline and bouchot mussels, langoustines in tempura, a mirliton of redcurrant, blackcurrant, cherry, blackberry and black sorbet.
