Selected Do you dream of a troquet where they cook a whole host of offal, in a neighborhood mostly frequented by Biomérieux executives? Here's one of those old-fashioned, inexpensive places where you enter as you are, in a friendly family, where grandma's dishes go on and on, and where all the culinary revolutions and trends will have no hold whatsoever. Sweetbreads, marrow bones, kidneys, calf's head and "tablier de sapeur" (sapper's apron) make up the bulk of the menu in this somewhat deprived corner of western Lyon.
