If we had to recommend a table in Valmy, it would without much hesitation be this charming bistro on the grande rue de Vaise. Opened in 2016 by Rémi Charvet, the establishment can count on Emmanuel Decloitre's cuisine, with classics updated and convincingly executed. Menus change frequently, so you can stop in often without going round in circles: pressé de boeuf, glace moutarde, condiment curry madras, a fish, citrus sabayon and kumquat confit, a hot sausage, pistachio condiment and red wine sauce, a chocolate mousse, hazelnut sablé and thyme ice cream.
