Tsuyoshi Araï has remained faithful to the Lyonnais February 14th that made him a household name, and it's an understatement to say that he's still Vieux Lyon's major gastronomic attraction. Far from any code, but as close to home as he is to us, he builds an imaginary bridge between France and Japan, creating a universe that makes for amazing evenings. Few ingredients and lots of taste, with compositions that are always inventive and full of finesse: caviar, celery, lovage, foie gras buckwheat kombu, brook trout carrot horseradish mandarin, mushrooms fig mizuna pike, Bresse chicken kabocha (Japanese pumpkin) salsify trumpet, Japanese chestnut bergamot miso, just some of the highlights of a meal that always leaves a lasting impression.
