Anthony Bonnet has perfectly found his feet in this mythical place, and we found the chef both precise and consistent with his three toques acquired twenty years ago in this same historic location. Beyond the exceptional decor of this Florentine house, there is a plate of great seduction, always fine and using the best of the region: beef from the Mézenc on an infusion of alpine hay, arctic char with carrot and tansy infusion, farm squab with chestnut and fermented plum. The dishes are both sober and tasty, with meticulous preparation and careful, controlled solemnity. The five-step menu at €125 is a very good approach (it can be arranged in eight courses for €165), and the cellar is well-stocked with Burgundy and Rhône wines in particular.
