Having worked for Haeberlin, Schillinger and Nasti, Frédéric Tagliani has learned from the best. His new restaurant on rue de la Poissonnerie, opposite the Halles, is good news for the prefecture, which now boasts an elegant contemporary table. In a setting of stone and light wood, the chef offers seasonal cuisine in a compact format, for freshness and flexibility. You'll discover strips of red tuna semi-cooked and lacquered with ponzu, avocado emulsion, radish and peanut pickles, minute of Arctic char from the Isère lakes, vegetable virgin with octopus and seeds, caramelized spring onions, black garlic, veal tournedos, cromesquis with chanterelles, fresh almonds, celery and fava beans, yellow peach in texture, vanilla ice cream, sweet almond emulsion and chartreuse gel. Good service.
