Gault&Millau's review 2026

Along with the Maison des Têtes, this other spot on the banks of the Lauch is one of Colmar’s most beautiful buildings—and among the most photographed. A grand Alsatian house dating from the late 16th century, particularly notable for its magnificent trompe-l’œil façade, it is now home to the restaurant of Jean-Yves Schillinger, who also runs JYS. Chef Benoît David serves up high-quality modern cuisine here, with a well-thought-out seasonal focus: a salad of shellfish in escabèche with basil espuma, red mullet fillets, fava beans, tomatoes, and sautéed seasonal vegetables, roasted ratte potatoes with basil oil, a yellow chicken supreme with celery ravioli, and chicken jus with Meaux mustard. Finally, there are some lovely desserts to round out the end of summer, such as roasted apricots with honey and lavender, apricot compote, and candied fennel served on an almond financier. Well-trained staff.
