Chef's Restaurant Martin Debuiche has had to change the name of his Parcelle, which we loved so much last year. Rest assured, the change hasn't altered the good habits we've come to expect, and the chef remains the sole master on board, offering convinced customers the substance of his reflections, through hidden menus in 4, 6 and 8 courses, from €59 to €129. The chef has developed a real commitment to short circuits with numerous regional producers, and displays a solid technique acquired in a number of fine establishments, including Jean-Pierre Vigato's Apicius.
