Chef's Restaurant In a quiet street near Place Stanislas, the small blue façade hides a dining room of ochre, duck blue and blond wood colors, and a young chef from the South of France, Frédéric Almagro, who offers a delicate cuisine with Mediterranean accents. Of the three menus, we opted for "cuillère en assiette" at €48.50: a pleasant paella revisited, served cold without rice with diced squid, pods and peas cooked in a paella broth, saffron gel and piquillos, mussels, poultry cromesquis and soubressade quenelles for a fine gourmet starter; This is followed by a low-temperature turbot ballottine stuffed with wild garlic mousse, accompanied by white asparagus, stuffed morels, black garlic and a wild garlic-infused white butter, Riesling and olive oil sauce; the meal ends with a fresh, acidic dessert of rhubarb in different textures and a herb sorbet. Pleasant service and a wine list that's not the most exciting, but goes well with the cuisine.
