Gault&Millau's review 2025

Just a few minutes from Metz's main square, this hotel is housed in the former food store of the city's military walls, a magnificent long building built in 1560 of yellow Jaumont stone. Restored with a beautiful blend of stone, glass and steel, it now boasts 78 rooms and suites. It is also home to one of the city's finest bistronomic restaurants, La Réserve, led by chef Guillaume Hieulle, who celebrates local recipes and short-distance produce, refreshed by a perfect selection of Moselle wines.
