Remarkable Restaurant Raphael Rego's hasty departure from the house he wanted and led came as a great surprise this summer. During his short stint at Christophe Saintagne's former Papillon, he nevertheless succeeded in assembling a crack team: Yoann Grégory, the MOF chef, Albert Malongo Ngimbi, the 2018 Gault&Millau young talent and sommelier, Alexandre Lauret, pastry chef at Loiseau, Mauro Colagreco and Le Grand Véfour, not to mention artisan baker François Massannet, who comes to present his breads made on site to customers. The setting is relaxing and warm, with a mix of wood, travertine, carpet and plush banquettes. Each guest receives an envelope enclosing the dishes on the unique €195 menu. After the appetizers (excellent squid and tomato), a vegetable-focused starter with a variation on Marc Faragoni's vegetables, followed by a silky, gourmet plate of lobster confit swimming in a tucupi sauce, beautifully cooked monkfish accompanied by roasted pâtisson, slices of yellow zucchini and pilpil, the picanha of barbecued wagyu, Santarém beans and farola, a real firework in the mouth with its three tiny peppers, red, orange and green, with a lemon and herb juice quenelle, ending nicely with the beautifully presented "chocolate, mate, cherry". An excellent wine list, with French and international wines to suit all budgets, and efficient service. The toques have been logically retained for the time being.
