Remarkable Restaurant It's at Miraflores that chef Carlos Camino manages, like an alchemist, to reconcile two cuisines with distinct identities. Peruvian and French gastronomies merge to create a distinctive style, from the bluff trompe-l'oeil of a lightly spiced butter in the shape of a chili pepper, to the foie gras and potato brioche. There's plenty of back-and-forth between South America and Europe: crunchy vegetable taco, lean salmon tiradito with a perfect combination of iodine and acidity, a gastronomic version of Peruvian street food, causa a la limena with wood-smoked squid. The chef's sublime quinotto royal with shrimp confit, in which quinoa is treated like Peruvian-style Cantonese rice, recounts the history of his country as Asian migrants mingled with the local population, while his tamal de pigeonneau à la banane plantin (squab tamal with plantain banana) is cooked like typically French roast meat. For dessert, a disconcerting azure-blue sea, a veritable topological and gourmet map of Peru to discover. A journey like this takes time, and diners will put down their luggage to linger over the wine list with its international references.
