Remarkable Restaurant Ludovic Pouzelgues' marine cuisine, cooked to the millimeter, with creative combinations and meticulous presentation, is served in a lively corner of the restaurant, catering to both residential and office customers. The fashion for surprise menus has been with the house since its inception, and customers who like the experience naturally find it to their liking: with mackerel carpaccio, garlic, chives and ginger surrounded by a circle of green oil and raw cream; mussels served in a potato, fennel and tomato aioli; then red mullet, Paimpol cocos, squid and tomato concentration; the most surprising and seductive dish of the evening? cuttlefish ink ravioli, stuffed with caviar grains, with an excellent tangy nage; we move on to veal fillet and its corn-swelled buckwheat-olive declension accompanied by green beans and black garlic. A very pleasant pre-dessert, with sugar veil, feta powder and plum cream, followed by a crumbly tart, lemon cream, hazelnut cream and caramel sauce. To accompany this cuisine, a wine cellar as committed to local winemakers from the Loire region and beyond. Friendly, attentive staff.
