Chef's Restaurant Frenchies who'd forgotten to leave home to try something other than classic or street food are gently tickled on the palate by a British chef who draws his inspiration from all over the world, offering sharp tastes and happy marriages between sweetness and liveliness. At Dominic Quirke's, the assurance of many favorable factors: professional work in every area of the game (production, kitchen, service, cellar), a sharp selection of products, a modern and interesting cellar everywhere, including by the glass. Now that all this has been verified, it's time to get down to the nitty-gritty: we start with the onion, more original than stunning perhaps, but well worked, the Korean-style octopus, sakura, ajo blanco, crunchy pak choï, celery brunoise, a dish bordering on three toques, which the brill at 54° clementine kosho squash merrily achieves, with its highly addictive nori kombu squash purée and a beurre blanc shallot sauce based on citrus juice and nori seaweed powder. The quasi de veau nantais bio is more conventional, a little eaten up by the vinegared fennel, and the final kiwi chervil miso does another fine job with an excellent sorbet. A very natural cellar, with an imposed philosophy that is well sold by a passionate sommelier, and friendly service from very well-informed, active and enthusiastic young women.
