"I was a gourmet, my grandfather and my mother cooked a lot, and that made me want to do something in the culinary field, but I didn't know what it was," explains Ludovic Pouzelgues. In the end, it was thanks to one of his teachers that the young man turned to cooking.

With his diploma in hand, he took his first steps at Château de Noirieux, near Angers, before moving to Nantes, to L'Atlantide, with Jean-Yves Guého. "It wasthere that I discovered exceptional products, and I moved through all the positions."

Four years later, Ludovic Pouzelgues landed a position at Maison Troisgros. "I absolutely wanted to work in a prestigious establishment, so I sent out a plethora of CVs. Then one Saturday, the executive chef of Maison Troisgros called me. I finished my shift that evening, got three hours' sleep, drove to Roanne and had my interview. "

In 2009, after a few months as a teacher at the Atelier des Chefs, Xavier Marie asked him to become a private chef. For two and a half years, he worked for the creator of the Maisons du Monde brand and his family. "It was exceptional, a great adventure. I traveled with them, I was in contact with an outstanding entrepreneur, it was great."

But the desire to set up on her own was growing. After visiting 17 businesses, he came across a Vietnamese restaurant in old Nantes. That's how the chef opened LuluRouget, on April 2, 2012, rewarded as early as 2014 with the Gault&Millau Jeune Talent Pays de la Loire trophy. In 2018, the establishment moved to the Ile de Nantes and was awarded 3 toques (15/20).
