Chef's Restaurant We knew them in the Paris region, and they have adopted Nantes just as Nantes has adopted them. Christophe François and his wife run a benchmark bistro in this lively yet discreet neighborhood, which is a magnet for all bon vivants. The chef loves meat and offal, fish from the sea or the Loire, seasonal produce, hunting and mushrooms. And above all, he's a great connoisseur and collector of wines from all over, and can take you on a tour of all the vineyards to discover. So yes, this insider's bistro, where you go in with your eyes closed and don't leave hungry, is a bit of a city favorite, we'll admit.
