A wise man and a great cook, the boss of Nantes' restaurants continues to explore the land and sea with acuity and knowledge, while keeping a keen eye on the times and the desires of a clientele he knows to be attentive to many parameters. His menu is also a reflection of the times, with beautiful, very beautiful produce, such as his magnificent turbot, a fine portion of seasonal vegetables distilled with precision, and prices always as tight as possible to stay at the top of the three toques without conceding anything. In this beautiful and historic house above the river, Jean-Yves Guého and his daughter Noémie take the helm with the firmness, know-how and audacity that characterize this passionate lover of good and beautiful food. Spider crab is always the star of the show, this year enhanced by a delicate herb and rose geranium broth, scallops and their barbeillons, a touch of caviar, a little overtaken by celery, but always gourmet, this pearly turbot, red onions and carmine for a lovely hint of bitterness. As is often the case, the simplest dish can also be the most pleasurable, as shown by this crispy shoulder of lamb to share, with caramelized juices, an almost guilty pleasure in its simplicity. Quentin's beautiful desserts, including a very good chocolate, round off a successful evening, with the wait staff, perfectly led by the managers, responding to every request, and the excellent sommelier Julien Pécaud enlivening a cellar as rich in classics as it is in new discoveries, both regional and from further afield.
