The evolution of the local landscape has made Les Cadets one of the must-visit restaurants in this part of town: at Charles and Tristan's, you discover, you savor, and preferably you adhere to the hidden menu formula, at €85 and €105 depending on the number of courses. There's no more choice at lunchtime, but the four-course menu is clearly laid out, demonstrating the palette of a contemporary chef, who knows how to make the most of simple, well-appreciated products: cream of heliantis trout roe and chestnut, haddock and mushroom poultry, rack of pork with Pontoise hazelnut cabbage, butternut tartlet with juniper diplomate cream. A good wine selection, motivated and explained. Second toque this year.
