Ah, Lasserre! A legendary house which, with Jean-Louis Nomicos now in charge, has regained much of its lustre. The staff in tailcoats, bow ties and vests, the roof that opens onto the stars, the furniture that's a little old-fashioned, but fitting, the memory of René Lasserre running the most beautiful house in Paris - all of this obviously gives you a considerable mouthful, and must harmonize with the André Malraux pigeon and the duck à l'orange. Indeed, the great chef from Rue Bugeaud, last year's Gault&Millau d'Or winner, who brought his famous foie gras and truffle macaroni in his luggage, works with the teams on site to ensure the three toques necessary for such a legend, and a few dishes full of freshness, such as the plancha carabineros, almond cream and tagetes peas, also ensure the transition to the modern world. And there's always the crêpes Suzette flambéed in the dining room, and the very large, classic cellar with its immense bottles, which is also pigmented with a few modern touches.
