Remarkable Restaurant The return of classic fashions and the grand dishes of bourgeois cuisine made the Tour happy in its new clothes. The grand tralala once again becomes sumptuous and more culpable, the Tower regains its lustre along with Notre-Dame, opposite, while beneath the windows flows the eternal Seine. In this temple of gastronomy, where everything is ready for you to measure its grandeur and justify the bill, comfort at table has progressed, but not space, service is courteous, professional and precise, without lapsing into empathy, and the cuisine of MOF Yannick Franquès is not a button down. The pre-entrée consommé marron sets the tone for mastery, in a magnificent presentation with a slightly dull flavor. A runny egg arrives, it's beautiful and generous the look is noble and the sauce is worthy of a grand meurette, with a widely distributed truffle. The saint-pierre is pan-fried in a nice butter, studded with lemon caviar and dill, bone jus, classically good, and the small piece of duck fillet, a little cooked, is surrounded by passion sauce and a pineapple raviole. The cheese platter, a little stunted, is not worthy of the house, before a grand clementine-chestnut dessert that suggests an angel-winged pastry chef has landed on the Tower. The wine cellar is Tourd'argentesque, enormous and fabulous, representing the history of the vine and the great winegrowers, and the sommelier is attentive and capable of making suggestions for all budgets.
