Gault&Millau's review 2026

A distinguished table in a very chic hotel in the center of town. Chef Benjamin Jourdren can juggle with the finest products, or keep things simple with his bistro menu. If the two toques are well and truly achieved with the attractive Signature menu (Ostra Régal oysters, fennel and apple langoustines, roast st. Pierre...), they are also maintained with the first two formulas, at €52 and €62, which show, with the royal sea bream with beet and hibiscus bone juice or the beef skirt steak with chu pointu bonito perfumed juice, a precision and balance of flavors that make this one of the city's most interesting tables. The service is top-notch, the desserts sober and successful, such as the matcha tea and pink grapefruit alliance, and the cellar good-natured with fine classics.
