Chef's Restaurant A faithful heir, Jonathan Bordes carries on Jérôme Artiguebère's legacy with a clear sense of perspective, continuing to bring to life here a cuisine of taste and fine French tradition. These are the dishes that honor the premises, a magnificent 18th-century chartreuse in the heart of Gascony, knowing how to combine regional habits with more contemporary fashions. These include Landes white asparagus with red miso, hollandaise and grapefruit condiment, a pavé de vieille nacré, green asparagus and cockle jus, and a declination based around pork, aiguillette and lacquered belly, caillette and chops of chard with sage. Excellent cellar.
