Gourmet Restaurant Saumur is on the move! Something new, something modern, and now this well-known local Aromate has become L'Instinct. Romain Bersan, who took over the business in January, is no stranger, having worked at Les Ménestrels and Le 7 (place de la Bilange). He brings his imagination, his ideas, his fashion sense and influences from all over the place to his first colorful and imaginative dishes: rabbit ravioli confit with sumac berry, creamy chenin roasted thyme beet with açaï notes, low-temperature Arctic char with sweet potato gnocchi in ponzu sauce, candied apple with tonka bean creamy pouring heart... A 1st toque while awaiting other visits that will help refine the note for this table to discover.
