Chef's Restaurant Bruno and Alexandre Seillery concoct together for a smooth handover. The father, a great chef and enlightened kendo enthusiast, passes on to his son, accustomed to large brigades thanks to his experience at Lucas Carton under the tutelage of locavore chef Julien Dumas, a know-how proven over the 10 years that this Ambroisy has existed. In return, the son innovates in terms of cooking, flavor combinations and textures. The result is a cuisine that rings true; it's simple because the work behind it is relentless. Plates become laboratories of taste, and we're off to Escapade with a 5-course menu at €75, where roasted celery comes face to face with itself in the form of a smoked mousseline, a few crispy chips and its burnt juice. The cursor goes further with La Belle de Provence, a tomato picked a few hundred meters away, cooked with lime, hollowed out and then baked again, with a tomato and combava tartar at its heart, laid on a tomato jelly and sorbet, all covered with a tomato and matured olive oil lacquer. Peach from a small boat makes its entrance with a fillet of bass lacquered with cosmos blossom in brilliant pink, adorned with a declination of zucchini. Lozère pigeon, roasted on the trunk with a little duck fat, is brilliantly surrounded by a pistachio mousseline, a cromesquis of thighs and giblets, a turnip cream and smoked jus. Finally, the chou à la praline rose, with its nougat ice cream, finishes us off with contentment. A good selection of wines by the glass, with interesting food and wine pairings. A well-deserved second toque.
