Chef's Restaurant Time passes, habits remain, and it's still a pleasure to frequent this majestic, venerable address. Chef Guillaume Collet has made the style as much his own as the house, and the people of Chablis have adopted him. His cuisine is elegant, easy to follow, amiably bourgeois, with a few personality traits, without escaping fashionable effects (tuna tataki, tomato burrata...). Nevertheless, you can have a fine Burgundian meal, with eggs meurette or snails, 5A andouillette, fillet of beef with Pinot sauce, and an excellent red fruit vacherin for dessert. And the 900 references in the cellar are an invitation to spend the night in Chablis, in moderation.
