Chef's Restaurant Having worked for Éric Briffard and Éric Frechon, Mathieu Sagardoytho has the means to achieve his ambitions, which are rightly deployed in this former 13th-century watermill. The chef, who arrived four years ago, has made great strides, drawing on his childhood memories and the skills he has acquired in the service of the terroir. The dishes focus on local produce, well presented in colorful combinations: Yonne white asparagus with peas, coconut and wild garlic green curry; Crisenon brook trout with bread crust, green beans, rhubarb, almond and red shiso, warm miso vinaigrette; Chocats farm chick roasted with verbena and Nice lemon, spring vegetables and cottage cheese; or Carpentras strawberries, black garlic and tarragon. In the evening, two menus in five and seven courses are available, depending on the chef's inspiration. An excellent wine cellar, featuring mainly Chablis and Burgundy wines.
