Chef's Restaurant A 100% vegan restaurant in a beautiful setting was almost essential in Lyon, but Thomas Bouanich has made it happen, and since the opening, there have been many good ideas and sensations in this house that exudes health and Zen well-being. The décor lends itself to this, of course, but so does the food, with menus that offer no choice, but speak for themselves, at €45 for lunch and €75 for dinner: panisse cress hoummous chou kale main de Bouddha, shiitaké oignon de Roscoff ortie bao, gnocchi céleri de 12h girolles épinards en signature, kiwi sablé cédrat mascarpone... It doesn't take long to realize the infinite variety of possible combinations of flavors, textures and colors offered by plant-based cuisine. To accompany the meal, you'll find homemade juice-based softs and a good selection of wines by the glass (Piron, Chirouze, Chaume Arnaud...) from the extensive cellar.
