Gourmet Restaurant The traditional decor of this Cordeliers bouchon is a sight to behold, immediately immersing the customer in a textural setting of earthenware, frosted glass partitions, Thonet chairs and marble tables, mirrors and fringed lamps. The style is a little kitschy, but well identified, in keeping with Jean-Guillaume Désormières' traditionally inspired cuisine. À la carte: herring salad with apples in oil and ravigote sauce, pike quenelle with lobster sauce and basmati rice, veal chuck confit and fried onions, cantal mashed potatoes and reduced jus. Classic wines from the region: Stéphane Ogier, Jean Foillard, Yves Cuilleron, Michel Chapoutier, Christophe Blanc etc.
