Description

This family estate of 18.50 hectares was founded four generations ago in 1930 in the Côte des Bar. The parcels are located on the sunny slopes of the Ource valley (la vallée de l’Ource), the southernmost tip of Champagne. Pascal Gerbais and his son Aurélien, pay particular attention to the vineyards, evidenced by membership of “Amplos" since 1996 which led to an integrated viticulture approach. They intervene as little as possible in vinification to let the fruit express itself and use minimal sulfur. Owners of old Pinot Blanc vines, the family produces an original champagne made 100% from this single variety called "L'Original". Aurélien, who trained in Burgundy, now leads the entire production methodically and with passion. All the resulting wines are of high level.

With a superb shiny gold robe, this 100% Pinot Noir has been vinified without sulfur and without dosage. The pure nose is discreet when first opened, offering notes of flowers and stone fruits of great finesse. Upon aeration, the wine fully reveals itself and exudes aromas of turmeric. On the palate, the Pinot expresses broadly and deeply before extending to an intense finish that is dry, sapid, and slightly oxidative. A lively, very successful champagne, with great evolution in the glass, a lovely partner for the famous Galician octopus.

Superb. The wine opens with notes of burlat cherries, intense crushed raspberries, perfectly defined, small black berries and blackcurrant leaves. It “pinotes”. Fine, complex and fondu. The palate matches with a fine, aromatic and chalky Pinot, combining sensation son concentration and crystallinity.

Voilà une autre audace des Champagne Gerbais qui recherchent continûment comment exprimer au mieux leurs raisins. Ce Coteaux Champenois blanc, élaboré exclusivement avec le Pinot blanc de la vendange 2018, n'est produit qu' à hauteur de 512 bouteilles. Un nez fringant de fruits blancs et fleurs comme la poire verte, le pamplemousse et la fleur de genêt, parfument une texture souple de fruit, tendue par une acidité vive et pointue. A équilibrer par des poissons gras comme un joli saumon gravelax et moutarde au miel.

On a predominantly Pinot Noir base, this blended rosé presents itself with a light, barely salmon colour. Citrus, currant and pink berry notes are well balanced on the nose. The wine is lively and sparkling on the palate. A fresh rosé, with such a low dosage it can be opened as an aperitif.

This pure Pinot Blanc has been produced for a long time by the family and has inspired quite a few other cuvées in the surrounding area. The nose is fresh and fine with notes of white pineapple, juicy pear and cream. In the mouth, the mousse has extra finesse and the wine offers a shimmering and enveloping roundness without falling into caricature, before the fennel seed final. Magnifies with aeration. We love it. Discover with a celeriac and lime salad.

Ici le cépage chardonnay est équilibré par la composition d’un assemblage issu de deux expositions : le nord apporte la fraîcheur et le sud la générosité dans une bouche à la fois dense et tonique. Des parfums très fleuris d’acacia, genêt et beurre se mêlent à la poire et au raisin frais. À savourer sur un pain brioché au chaource, concombre et sureau.

This Rosé de Saignée has an impressive raspberry robe, more like a red wine. The nose is full of red fruits with a tangy edge of English candy, and after aeration reveals aromas of elderberry and grenadine. On the palate, the wine is bonbon, both powerful and tense, lengthening on the finish with notes of blackcurrant. Surprise your friends by pairing it with a pigeon.

Cuvée expérimentale qui chaque année à son originalité. Il s’agit ici de la vendange 2015 dégorgée en décembre 2018, réalisée à partir de Pinot blanc en sur maturité sur une quantité de 996 bouteilles. Le nez est flatteur avec des notions de fruits à noyaux comme la pèche et la prune mêlée aux céréales toastées et la levure. La bouche est douce et reste fraîche avec une effervescence fine et une finale acidulée d’agrumes et prunes. A savourer sur des beaux fromages affinés avec des fruits frais comme un Langres servi avec une confiture de rhubarbe et poivre, pommes pink lady.
