Winery presentation by Gault&Millau
This family-owned estate, established in 1808, is set amid the medieval architecture built by the Cistercian monks of Clairvaux Abbey. It is run by Michel Drappier, assisted by his children, Charline, Hugo, and Antoine. In these vaulted cellars, built in 1152, lie the meticulously crafted cuvées—wine-forward champagnes dominated by Pinot Noir. Constantly innovating, the estate has created a champagne made entirely from Fromenteau (Pinot Gris), one of the forgotten grape varieties it continues to cultivate, along with Arban, Petit Meslier, and Blanc Vrai.
