The delicate, creamy effervescence reveals very fine bubbles. The nose is marked by herbaceous notes and white flowers, followed by chalk. On the palate, the wine is velvety, caressing and sapid, delivering notes of almond kernel and menthol. The finish is adorned with beautiful bitters that will go wonderfully with roasted Breton lobster and braised samphire.

This family-run business, founded in 1808, is located in the commune of Urville, in the Aube region, with vaulted cellars dating back to the 12th century, the work of the Cistercian monks of the Clairvaux Abbey. This is where the Drappiers make their Pinot Noir-dominant wine champagnes, with this grape variety accounting for 70% of the vineyard and trading area. The work in the vineyard is respectful of the soil (the estate has been certified organic since 2023), and vinification is low-intervention (minimal sulfur dosage during bottling). Michel Drappier, assisted by his children (Charline, Hugo and Antoine), is always eager to explain and promote the Champagne region as a whole. Constantly researching, the domaine is experimenting with a champagne made from pure fromenteau (pinot gris).
