Oscillating between lactic acid, raw butter and crème fraîche, evoking the beginnings of autolysis and notes of yellow fruit and curry, this first nose is provocative. On the palate, the bubbles take a backseat to the full expression of ripe, racy fruit. The finish is both saline and bitter. A champagne of temperament for our greatest pleasure.
