3,900 bottles of Blanc de Noirs from Les Monts Midi. A brilliant, almost crystalline gray-gold color, with numerous fine bubbles in the chimney. The nose is racy, with a complex aromatic palette of ripe white fruit, stewed quince, honeyed dried fruit and light smokiness. The attack on the palate is delicate and subtle, underpinned by polished tannins and a chewiness of white fruit with chalky notes and beautiful minerality, ensuring majestic uprightness. A festive cuvée destined for an exceptional dish like lobster medallions with candied mangoes.
