The complex nose bears witness to the richness of the harvest: roasting, fresh mushrooms, honey. The very fine bubbles barely caress the palate. This is a mature wine, in the prime of its life, which needs to be savored at length to identify its full aromatic potential: creamy caramelized milk, sweet spices. The whole is sapid and digestible, supported by a salivating, zesty structure. Best served with a financial vol au vent.
