This cuvée, composed of 65% Chardonnay, has benefited from a cork tirage, providing micro-oxygenation over the years. The nose is beautifully aromatic, with a spicy, undergrowth structure, fat, toasty notes and the freshness preserved by the absence of malolactic fermentation. Superb length on the finish for this rich vintage, which the house has succeeded in not over-dosing (6 g per liter). Serve with a veal chop with morels and cream.
