This 2012, with its light color and slightly reserved nose on opening, shows great potential. Fine notes of juicy pear, citrus zest and white bread give way to toasted hazelnut and brioche on aeration. On the palate, the champagne is full-bodied, clean and precise, preserving just the right amount of freshness, never out of balance. This solar Blanc de Blancs retains its finesse and tension. It will be a pleasure to open for many years to come, accompanied by pan-fried veal sweetbreads.
