A ghost ship for some, a discovery and a surprise for others, opinions are divided, except for the plate, which remains as intriguing, clever and delirious as ever, earning Adrien Cachot his third toque today. No stranger to secrecy, the young chef plays with hidden menus, cryptic titles ("tartelette aux larmes", "sauce magique"...) and reduced presentation of dishes, without indicating the composition of accompaniments. This takes away some of the freedom, but it doesn't prevent you from tasting: nice moments on the starters with nori seaweed with peanut butter (the famous tartlet), lemon mussels with shellfish reduction, veal brain karaage (the "magic sauce" is Thai-inspired), eggplant kombu with sesame glaze, watermelon with chili vermouth.. A nice personal touch with "Cachot et pepe" mochi or beef heart marinated in roasted pepper and cooked on a Japanese barbecue, tied with matelote sace, oyster with flambadou miso pistachio condiment... We conclude with the nori and parsley ice cream chocolate dessert. Good wine selection, choice of wines by the glass and interesting pairings.
