Chef's Restaurant Shimpeï Oïe offers fine, meticulous cuisine built around the finest produce. The menu, announced orally by the owner, initiates a discreet, almost restrained exchange. Little by little, the contact is made: the tone relaxes, passion emerges. In the kitchen, the yellowtail captivates with its balance of textures, between melt-in-the-mouth, crunch and well-dosed acidity. The cauliflower velouté, simple in appearance, takes on new depths with a subtle thyme emulsion. The chicken supreme, perfectly cooked, is accompanied by a concentrated but parsimonious jus. São Tomé chocolate, lightly sweetened and deep, elegantly concludes the meal. At €39 excluding beverages, the experience is based on precise cooking, respected products, a fine wine list and a sincere bond built up over the course of the service.
