In the kitchen, the yellowtail captivates with its balance of textures, between melt-in-the-mouth, crunch and well-dosed acidity. The cauliflower velouté, simple in appearance, takes on new depths with a subtle thyme emulsion. The chicken supreme, perfectly cooked, is accompanied by a concentrated but parsimonious jus. São Tomé chocolate, lightly sweetened and deep, elegantly concludes the meal.
