Chef's Restaurant Charles-Antoine Jouxtel and his partner Charlotte Schwab impressed us right from the start, and since then, nothing seems to have stopped them. With a CV of competitions under their belts (Bacquié, Renaut and Donckèle to name but a few), the young couple set up shop on the Normandy coast, not far from Charles-Antoine's native Manche, in an area lacking in fine restaurants. The team has grown since the early days, still running the tasting bar (which you discover as you enter) and this gastronomic table that is fast approaching its third toque, once the final minor adjustments (a seasoning here, a lack of acidity there) have been made. The seven-act menu offers some very fine moments, with the lisette au poivre et salsifis en texture, the langoustine just seared, seasonal vegetables and siphon coraillé, or the very fine hen à la crème, confit thighs and roasted supreme. Desserts in the same spirit, playing the card of modernized Normandy (a particular favorite is the praise of the apple and its brandy), well-oiled service, under the elegant direction of Charlotte, a passionate sommelier.
