The economic context and competition sometimes push restaurateurs to cut corners. They would do well to take inspiration from these virtuous Passantes, which offer exactly what one expects by the sea: simplicity, freshness and sincerity. Chef Maxime Lehoucq's honest but not simplistic cuisine, in a fresh brick and stone decor, provides just the right answer: flame-burnt mackerel and beet, pork pie, duck, foie gras and piquillos, bouillabaisse-style roast monkfish, fennel compote, aioli, Brittany veal chop, oyster mushroom cream and seasonal vegetables. Good menu at €36.
