A feast in Bozouls costs €35—not a penny more. A single menu, crafted with such sincerity and generosity by Guillaume Viala: Estaing trout with marinated zucchini, sautéed farm-raised veal with black olives, cheeses, and pear cake with caramelized brown butter ice cream. Add to that an amazing wine cellar, featuring hidden gems and top-shelf bottles from all over at unbeatable prices, and the spectacular setting of the Bozouls Canyon for a post-meal stroll.
