It's one of those places of pilgrimage where the families of the Tarn region have been coming for generations, as habits to be handed down, for the pleasure of getting together and sharing good traditions. L'hôtel central is a century-old story, well-preserved right down to its decor, which is a little old-fashioned but so familiar, and where chef Julien Fanjaud ensures continuity. You'll find Lacaune ham, pan-fried lamb sweetbreads with parsley and morel crème de brisures, sea bass fillet, lemon thyme poultry jus, raw and cooked sesame fennel duo, Aubrac beef pavé, smoked magret sauce and crushed potatoes with ceps, paris-brest-style cracker choux with rose and white chocolate, raspberry jelly and lychee ice cream.
