Chef's Restaurant On the downside, there's only one menu in the evening, a hidden one at €125. This same menu is worth three toques, and we would have jumped at the chance had it not been for the already old-fashioned constraint of the surprise menu. Nonetheless, once again we had a great time with the two Bonano brothers, Clément, the chef, for his inventiveness and open-mindedness, playing with Mediterranean influences from Spain to Italy via the Gulf of Lion, and Benjamin, master of the cellar and service. After pleasant appetizers, the beautiful Tarbouriech oyster with ginger-lemon potato mousse, the tourteau with carapace and chervil emulsion, the maigre cooked at low temperature with salicorne and a fine work on the carrot with Noilly Prat sauce before the piece of Galician beef Rossini style with asparagus. Desserts a little below par (strawberries in pavlova, floating island and croustillant, but also an amiable revisit of tiramisu), service full of ease and thoughtfulness, including of course the remarkable work of Benjamin, who juggles a highly specialized regional cellar to establish the best pairings.
