Gault&Millau's review 2025

Set in the heart of the Saint-Chinian wine appellation, this hotel was first and foremost the brainchild of a Belgian entrepreneur with a passion for wine who fell in love with the Hérault region. Determined to offer a place that was as seductive as it was atypical, he chose to spread the common areas, dining areas and 24 rooms and suites across a dozen restored village houses (but without TV or wifi!). Everything here infuses luxury and bohemian spirit: beautiful antique furniture, Buddha statues, antique costumes hanging on the wall... A cheerful and singular establishment, a member of Les Collectionneurs, which attracts a growing number of loyal guests, also seduced by the spa with sauna and Jacuzzi, the exceptional wine cellar designed by Belgian designer Lionel Jadot, and the quality of its restoration. Between Le Thai de Castigno, La Petite Table, and La Table Castigno, the gastronomic restaurant run by Stephan Paroche and Justine Viano, gourmets are spoilt for choice...
