Chef's Restaurant
Robin Dorgler, who has learned a great deal and retained much from his many travels, shares a lengthy story to keep his guests captivated, convinced they are having a truly unique experience. Beyond the narrative—which may not appeal to visitors in a hurry—there is an encounter with an intriguing cuisine, distinctly Japanese-inspired and, at the very least, highly personal, in this welcoming restaurant on the outskirts of Strasbourg: octopus ceviche with yukiang sauce and daikon “spaghetti,” veal sweetbreads in Japanese mushroom ravioli with chicken jus, tonkatsu-style tuna with wasabi broccoli mousseline, shiso-marinated lamb with Jerusalem artichoke mousseline and watercress… A diverse wine selection, available by the glass or by the pitcher.
