Here's a place not to be missed in Strasbourg! Preceded by an elegant inner courtyard and a century-old tree, the great stable of the national stud farm, built in 1756 and listed as a historic monument, has been transformed into a stylish brasserie by Jouin & Manku. A meal here is a multi-sensory experience, with the warmth of wood, the smell of leather, high ceilings, soft lighting and the ballet of service of a grand brasserie. The two centerpieces? A superb monumental contemporary staircase and an elaborate exposed framework. The menu is unashamedly eclectic and open-minded, featuring regional, national and international specialties. The four-meat pâté with foie gras is a model of its kind, even if the green salad, although well-seasoned, seemed a little overwhelming. The cod back, very fresh and with shiny flesh, is precisely cooked with mother-of-pearl; it's served with a buttery purée and a well-dosed coconut curry nage. As for the Allaiton de l'Aveyron lamb shoulder, cooked at a low temperature, it's simply melting and served with a full-bodied jus and Munster Valley potatoes revisited with olives. Thanks to pastry chef Tinh Tran, the meal ended on a high note: the citrus tartelette seduced us with its fresh shortbread pastry topped with almond cream and lemon cream, its fromage blanc mousse and lemon sorbet. Like the decor, the cuisine is remarkably simple and unrivalled, while the wine list is equally eloquent.
