Under the direction of chef Cédric Koch, the kitchens deliver pleasant, inspired work, Rosheim snails, watercress royale and light poultry consommé, a zander and zucchini back, zander quenelles, smoked trout roe, creamed bone juice and basil oil pearl, a nestling pigeon from Théo Kieffer roasted on the trunk, pommes Anna, yellow oyster mushrooms from Alsace, date-ginger condiment and grand veneur sauce, a medallion of milk-fed veal from Aveyron, caramelized carrot purée, hazelnut praline with fleur de sel, carrot leaf textures, a 65% chocolate soufflé tart, Madagascar vanilla ice cream. Good cellar selection.
