Florence and Philippe Zeiger's restaurant has been the best in the region for several decades, proving that it's possible to earn three toques without necessarily playing the luxury and ostentation card. But make no mistake: the dining room has recently been (nicely) renovated, the comfort is real, and the former student of Jean Bardet and Bernard Loiseau demonstrates daily energy and inventiveness that transpire in the plates: razor clam tartar with oysters, wakame and cucumber, caramelized veal sweetbreads with chanterelle mushrooms, apricot and peach ice dome, rosemary gel and vanilla ice cream make for a pretty sequence full of intensity. A fine, comprehensive wine list and a well-placed market menu.
