Chef's Restaurant Tradition is always in good taste at this endearing establishment. The bistro is always lively, and the gourmet table comes alive in the evenings and at weekends for a fine menu from chef Naïn Gamboa, which delivers on its promise at €75 (and €95 with an extra dish): a lovely starter featuring tomatoes in season, red tuna just seared and stuffed with spaetzle bell pepper and salsa verde, and summer game with mole sauce, nicely accompanied by smoked eggplant caviar gyozas and barbecued eggplant, before a fine chocolate dessert by Florencia Dupont Vazquez. The cellar is very eloquent on Alsace, with many fine flasks elsewhere, and service is as well orchestrated as ever in Mariella Kieny's beautiful home.
